Süßwaren unterliegen wie alle anderen Lebensmittel einer strengen Qualitätskontrolle. Die zu bestimmenden Parameter reichen von Nährwert, Feuchte- oder Fettgehalt bis hin zur Quantifizierung bestimmter Inhaltsstoffe wie Vitaminen oder Alkaloiden. Da in der Analytik nur einige Milligramm oder Gramm der Proben benötigt werden, stellt die vorherige Zerkleinerung bzw. Homogenisierung sicher, dass diese kleine Teilmenge die gesamte Ausgangsprobe repräsentiert und so reproduzierbare Ergebnisse erzielt werden.
